Introducing ‘The Foodies’

Holland Hall’s Owner, Entrepreneur and Philanthropist Bill Kenyon (AKA – The Frustrated Chef), has travelled across the globe experiencing the worlds finest cuisine, which has provided rich inspiration for his own unique culinary creations, research and development.

Alongside him Holland Hall’s CEO Bevan Middleton has decades of 5 star hotel general manager and fine dining culinary experience and he is our ‘Master Of Wines’.

Then we have Christopher McCaughran Holland Hall’s Director of Food and Beverage who has worked with Marcus Wareing at Belgravia & Hotel La Tour and Luke Tipping at Simpsons. He is a judge for the British Culinary Foundation and has been awarded ‘Master of Front Of House’ with Paul Bacouse.

Completing our ‘Foodie’ Team, Holland Hall’s Executive Chef Matt Ellis and his brigade have been creating mouth watering culinary masterpieces in preparation for launch. Matt is extremely well travelled in the culinary field, classically trained and has worked at multiple rosette and Michelin stared establishments; he was voted ‘North West Chef Of The Year’. He is an inspiration to the up and coming chefs of today, occasionally lecturing at both Manchester and Runshaw Colleges. His impressive background and skills married with old school theatre style inspired service and our Chef de Rangs bringing back gueridon service. Pair perfectly in delivering The Restaurant, freshly baked breads, chefs cooking at your table and the cheese trolley brought to you to select from and some artistic flair when it comes to desserts!

With a carefully selected range of fine wines to choose from our cellar, you will be spoilt for choice. The Restaurant will be intimate, personal and an unforgettable dining experience.

Such is the quality and freshness of our ingredients, the menu and specials will change weekly and some seafood dishes will require 48 hours’ advance booking, so do take a look at our menu ahead of your visit, in case we can tempt you with one of our more exclusive offerings.
